I have a lot of different spreads and butters in my house. I’ve always been a fan of speculoos, so spending $6 on a jar of biscoff spread was a no brainer! I find it indulgent, like nutella. I don’t eat it every day, or really every week. Quite funny that I found people baking with it. And making cookies out of cookie spread. Hey, I’m game.
The recipe is nothing but easy. They are SWEET. The husband was relieved to hear that he didn’t have to part with them so he grinned and popped a few in his mouth. I had one and was surprised I could pace myself. If you haven’t had biscoff spread (or the Trader Joe’s clone, which I didn’t get to in time) then try it out. I think it would be fantastic in cake or icing too.
- ½ cup margarine
- ½ cup soymilk
- 2 cups granulated sugar
- 2 Tbsp all-purpose flour
- ½ cup Biscoff spread
- ½ tsp vanilla
- 3 cups oats
- In a large pot bring to boil the margarine, milk, sugar, and flour over medium heat.
- Boil for 1½ minutes.
- Remove from the stove and immediately stir in the rest of the ingredients.
- Drop tablespoonfuls onto wax paper and allow to cool.
- Store in an airtight container and enjoy!
