I have a lot of different spreads and butters in my house. I’ve always been a fan of speculoos, so spending $6 on a jar of biscoff spread was a no brainer! I find it indulgent, like nutella. I don’t eat it every day, or really every week. Quite funny that I found people baking with it. And making cookies out of cookie spread. Hey, I’m game.
The recipe is from Budget Gourmet Mom and it is nothing but easy. Subbing in margarine and unsweetened almond milk really made no difference at all in these cookies. They are SWEET. The husband was relieved to hear that he didn’t have to part with them so he grinned and popped a few in his mouth. I had one and was surprised I could pace myself. If you haven’t had biscoff spread (or the Trader Joe’s clone, which I didn’t get to in time) then try it out. I think it would be fantastic in cake or icing too.
