I didn’t have much hope for this Healthy Chocolate Chia Pudding. Honestly, it ended up quite good. I did use a bit more maple syrup than called for, mostly because I didn’t trust the recipe. I just drizzled, so maybe it was about 2-3 tablespoons. Quite tasty. Looks lumpy and such but it really isn’t.
However, I probably won’t make it again. The chia seeds just made it weird. Sure, it gelled up the pudding, but it was still kind of crunchy and textured. And the little chia seeds got caught in my permanent retainers. Nothing pisses me off more than getting food caught in my teeth. So while it is tasty and “healthy”, I think I’ll just make another pudding recipe next time. I like mine smooth.
