I really love lemon curd so when I found a vegan recipe I jumped at the chance to make it. Plus, I have a lemon tree, so I’ve got a ton of lemons to use up. I know it should matter what fruit you use, but this just didn’t turn out. I mean, it is good, but not curd like. I’m not sure why. Maybe I didn’t add enough liquid or maybe it seized up. It is tasty, but more of a jelly texture.
I have to say it was more curd-like in texture before it fully cooled. I tried to reheat it to get a bit of the consistency back but it was lost. So now I have jelly. Good jelly, but not curd. I’m still on the hunt for a good vegan curd recipe, so ping me if you find one that worked for you!
