Gingerbread Waffles from Vegan Brunch

Okay, it’s the holidays. I wanted waffles and some cheer. Opened up Vegan Brunch and turned right to the Gingerbread Waffles. I even sprinkled them with powdered sugar that looks like snow! Okay, it doesn’t, but I mean, more sugar never killed… nevermind. We’re all non-diabetic in this household. Well, pre-brunch.

Another hit though, even the husband liked them. I might have added more spice and molasses than called for but we’ll never know because I didn’t measure. That’s the thing with waffles, why measure flavour additives? I mean, just toss some cinnamon, nutmeg and molasses in there. Plus, not dirtying a sticky spoon for molasses just makes sense!

And just because I wrote this post hopped up on sugar doesn’t mean I’m not going for a hike. Well, maybe it does, but the waffles are still really good. And there are leftovers! I love leftover waffles. The toaster comes in handy in the morning and you can just hold them in your hand. Yum!
