Vegan MoFo Recipe #23: Chocolate Chip Cookies

So, I had some white chocolate chips and a friend who likes em. I dug into the book and found a traditional chocolate chip cookie recipe. This one uses shortening and it still isn’t my super favourite but that could be because of the the white chocolate chips. I’m not a fan, even the vegan ones. I omitted the nuts too, because I could.

Chocolate Chip Cookies

Originating with our American cousins south of the border, these scrunchy chocolate-studded gems have been firmly adopted by Canadians and would be a strong contender for “Canada’s favourite cookie.”

Preheat oven to 375Ëš F

Grease a baking sheet lightly.

Sift or blend together:
1 1/4 cups pastry (soft wheat) flour
1/4 teaspoon baking soda
1/2 teaspoon salt

Cream together:
1/2 cup shortening
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 teaspoon vanilla

Beat in:
1 egg (egg replacer)

Beat until light and fluffy.

Stir in dry ingredients.

Fold in:
1 package (6 ounces) chocolate chips
1/2 cup chopped walnuts

Drop batter from a teaspoon about 2 inches apart on prepared baking sheet.

Bake in 375Ëš oven for 8 minutes, or until light golden brown.

Makes about 4 dozen.
