Sometimes you just want some breakfast food. I busted out Vegan Brunch for this tofu scramble. I probably shouldn’t have pressed the tofu because it was very dry. I wasn’t in love, mostly because I think I’m used to a much greasier tofu scramble. I never really liked scrambled eggs so I have no idea why I like tofu scramble. But I do! You can put anything in it honestly. I used frozen veg this time because we are in need of a farmers market trip. Serve with tater tots or toast, your choice 😉
