Â I can’t believe I totally screwed these labour intensive cookies. So I was trying to make a sugar free recipe I thought this one would hold up. It takes 45 minutes to reduce the pumpkin in this recipe which is why I’ll never make it again. I just was burning or almost burning the stupid pumpkin. Then I totally screwed them up by thinking that stevia would work as the sugar. It didn’t. It left a pretty harsh aftertaste. Ugh.
This one is totally on me. I’m sure they are as fabulous as everything else in Vegan Cookies Invade Your Cookie Jar, but I doubt I’ll have the patience to make these again.
