Let me tell you, I love this cake. It is one of the first things I made from Vegan with a Vengeance, and from then on I was hooked. The chocolate cake is moist and the added raspberry is just perfect. I’m generally a chocolate cake with chocolate filling kind of girl, but for me this cake just works. I’ve made it many times before, and even with strawberries and blueberries.
Here’s the recipe, I generally would incourage you to buy the book, but you should at least make this recipe. I made half the recipe and make six mini cakes. I made them in texas muffin pans which are a bit bigger than regular muffin pans. What was the occasion? I wanted chocolate cake! Duh.
