Sometimes there is just no patience for cake. That’s where quick breads come in. I decided to try the Cocoa-Not Quick Bread in 500 Vegan Recipes. It had chocolate and coconut! Right up my alley. Unfortunately, I think the 60 minute cook time was a bit too much, it came out dry. And it didn’t hit my sweet tooth enough. I think this would be a great tea bread or maybe even breakfast. Maybe just adding some sweetened coconut would make a difference, but serving it with some soy whipped cream really helped me eat more than my fair share.
