Oh wow this was good. I was craving Indian food and had chickpeas. Appetite for Reduction has been a really awesome book so far! I’m not using the book because of a need for “reduction” but because these are some pretty solid recipes. Plus, you don’t have to feel guilty about them. That does help.
Anyway, the curried chickpeas? Stellar. The spices were a great mix and it was so easy to put together. My kale was going south quickly so I did half kale and half spinach. I kind of cheated and used a very plain canned tomato sauce since the husband doesn’t like any chunks of tomatoes. Turns out the greens turned him off and he wasn’t going to have any. He did like the taste of the chickpeas after he had a bite, but it was a no-go with the greens. Which was fine since I loved it, and it reheated so well! Don’t mind the sushi rice, I’m on a sushi rice kick.
