Yeah, I actually used a book for a salad recipe. It was good! This is the first recipe in the book Appetite For Reduction. I found the recipe here as well. The homemade dressing is really easy and a great idea. I think there might have been a bit too much dressing, but that is easily solved by adding more ingredients.
I like that the grains play the major role in this salad, and that the lettuce isn’t too much. It is a nice change. I was worried about it getting soggy after sitting in the fridge since I rarely like leftover salad but this one was okay. In fact, it might have tasted better, and I added more romaine on the second pass for a bit more volume.
I used cabbage instead of (ugh) lettuce. Way better idea.
Yes, cabbage IS a way better idea. Hmm.
I really love quinoas and I have a lot of quinoa recipes piled. It’s literally the best thing I have ever had!
