Well, I’ve been craving veggie burgers and the husband was too into work to take me out. I’ve been saving this recipe from Appetite For Reduction for awhile and decided to bust out the food processor and Mr. Foreman.

The only thing I did different was I didn’t add the cilantro or seed the chipotles. Yeah, it was messy and I didn’t care. While I found the burgers pleasantly spicy the husband declared them too spicy for him. Oops. I must be getting my spicy tongue back from all the Mexican and Thai food I’ve been eating. The chipotle and paprika didn’t phase me at all.

They were a bit mushy but since I put them on the Foreman it wasn’t that big of a deal. Looks like I have 6 more to eat this week by myself though!
