I really wanted to make these from Vegan Cookies Invade Your Cookie Jar on the weekend but they take a long time to set and I ended up running out of time. So last night I decided to make them for work. Now that I’ve made them and cut them I’m not sure they are perfect for work since I’m pretty sure they will hold up best in the fridge. But that’s okay, because they rock.
So think pecan pie in a bar. But vegan. I’m not a fan of pecans or walnuts but pecans are better than walnuts on the nut scale. So I had a nibble and I was so impressed! I thought I had brown rice syrup but that was at the old place. Instead I made due with half agave and half barley malt. The barley malt gives them a new depth. And don’t worry, there is a ton of brown sugar in these.
I’m so surprised I haven’t seen more blog posts about these. I keep on finding the recipe, but not people making them. Come on! They are great!
