After the last cookies with ginger I made, I wanted more. So I turned the page in Vegan Cookies Invade Your Cookie Jar and up came Blackstrap Gingersnaps. Yum. I always keep blackstrap molasses in the house. I grew up with it as another condiment, and I loved molasses sandwiches on a nice crusty roll. Yes, I know. Weird. My mom was happy because it is high in iron! And non of that sissy “mild” stuff either. Sheesh.

So anyway, making gingersnaps in July is just plain weird. But these are excellent cookies and very easy.  I’m considering baking my way through this book, since I already have a lot of the recipes under my belt! I doubt many people around me will complain.
