I love roasted chickpeas. They are so easy and a great snack. If I have extra chickpeas from a recipe I tend to roast them and/or put them in salads. Have you had roasted chickpeas on salads? Better than croutons! I don’t measure the spices, I just pile them in there until the chickpeas are covered.
- 1 15 oz can of chickpeas
- 1-2 Tbsp olive oil
- cajun seasoning
- Preheat the oven to 450 degrees.
- Rinse the chickpeas and blot them dry with a paper towel.
- Then toss them with the olive oil and cajun seasoning. Use as much or as little as you like, or just a sprinkle of salt for plain chickpeas.
- Roast for about 30 minutes or until they are brown and crunchy.
