After the cookie disaster, I had a cake disaster. I don’t know what is wrong with me. However, this Double Chocolate Loaf Cake tasted amazing, it just fell apart. I was kind of pissed because I used the last of my chocolate chips on this baby and I couldn’t share it. Well, I took care of it myself and then ended up sharing so don’t you worry. The taste was rich and wonderful.
I don’t blame the recipe or veganizing it for it falling apart. I just have issues with loaf cakes some days. And since I was already a disaster in the kitchen, it just followed suit. I’d make this again no problem. Be sure to use high quality chocolate! It really does make a difference. I used almond milk and apple cider vinegar for the buttermilk and egg replacers. It would have been fine, but I think I tried to take it out of the pan too early and it did sink anyway. Nothing a little coconut milk ice cream won’t fix 😉
