I always feel guilty when I get a lot of cherries and just sit there and eat them. Honestly it is my favourite way to eat them so I rarely bake with cherries. This time I decided to make Cherry Oatmeal Muffins vegan style.

These were super easy to make and I subbed in almond milk with apple cider vinegar for the buttermilk and egg replacer. The batter was really thin but I went with it. As you can see they turned out a bit flat, it was more like a cake batter. No worries though because they tasted pretty good. I quartered the cherries so there were pretty big pieces. A nice change from other fruit filled muffins.
