I found some really beautiful organic nectarines at the farmers market and had to pick them up. They tasted wonderful on their own but I really wanted to bake! I had this recipe for a Nectarine Brown Butter Buckle sitting in my recipes folder from Smitten Kitchen and I’ve never gotten a bad recipe from there so I had to try it.
I didn’t use brown butter, as I don’t have any butter. I did melt the margarine to make the cake and also subbed in egg replacer as well as almond milk with apple cider vinegar for the buttermilk. I have a feeling this cake would be off the hook with the original ingredients but it was really good veganized as well, just different. I made a half cake and used a texas muffin tin to get individual cakes. I would definitely make it in cast iron like the original recipe if I had a group to feed, but it was just me and I gave the rest to my new neighbours.
