Lemon-Coconut Poppyseed Muffins

I thought these would rise a bit more but they were a bit short. Still, quite tasty. I used almond flour since I had some and coconut butter instead of coconut oil. This is another fun recipe from The Non-Dairy Queen blog, but it is a guest post. Honestly next time I would add lemon juice because I felt that it wasn’t lemony enough. I had this problem with the lemon poppyseed muffins from Vegan with a Vengeance as well. Not lemony enough. However, the coconut makes it really interesting.
