I have my kitchen back and was looking forward to making more bread! I’m on Kaiser Rolls in the Bread Bakers Apprentice and that sounded really yummy. I used barley malt syrup and it gave them a bit of a darker hue. Which is totally fine because they tasted great. Made them vegan by using an egg replacer.
I bought a kaiser cutter, and while it got bad reviews for being plastic and not really working I found it worked fine, you just can’t be gentle with it. These rolls were pretty easy to make so I’m sure I’d make them for a bbq or some other sort of event. They just take time as you need to make a pate fermentee so it is about a 2 day process.
