Big Grandma’s Best Peanut Butter Cookies

I took a nap yesterday and couldn’t sleep last night. So what’s a girl to do when she has the place to herself? Bake. I didn’t have to worry about waking up the husband but honestly he probably wouldn’t have minded anyway. Yesterday was National Peanut Butter Cookie day so I whipped up a recipe I tried before from Food.com.

Last time I think I added way more flour and made the dough more stiff because of the shortening. This time I left it as is and they spread much more. Next time I’d go with more flour again since I like them a bit more dense. I don’t like butter flavoured shortening so I never buy it. The rest was just to use an egg replacer (especially paring down the recipe and having to use 1/3 of an egg). So easy. This isn’t my tried and true peanut butter cookie recipe but it was easy enough. I have to work on my grandmother’s a bit more before I figure out her instructions.

Also, you seriously can’t make peanut butter cookies without the fork marks. I just refuse to do it. I’ll mess with a recipe and bastardize it, but I won’t leave fork marks off of a pb cookie. My standards for going by the book may be low, but I do have standards ;)
