I think these peanut butter banana bars are some great breakfast bars, especially for someone who doesn’t want an ultra sweet treat. These aren’t new to me since I’ve made them before but I was reminded of them the other day when I had some bananas and peanut butter as a snack.

The recipe is from Food.com and I of course veganized them. I generally have sugar substitute on hand but I’m still not in my own kitchen so I used regular sugar. The egg replacer and almond milk were easy substitutions. These are even less sweet than usual since my bananas were not super ripe and I didn’t want to wait. And I use natural peanut butter that doesn’t have added sugar, which the recipe doesn’t account for. Oh well. It really does make for a nice breakfast even though I seem to have turned into a sweet fiend.
