Sugar free, gluten free and vegan. Okay! I can deal with that. This recipe for Super Pumpkin Bars is pretty easy, and the outcome is nice. The texture is a bit weird because of the oat flour, but it is fine if you aren’t expecting a wondrous floury treat. I added a few more dates and they turned out very sweet. Not a big deal to me, but along with the cranberries it makes for a sweet bar. A nice change to my breakfast bar recipe, especially with the pumpkin but I think I prefer whole oats.
