In case you haven’t figured it out, I really like beans. I make them a lot. From taking hours to taking minutes I have a ton of different recipes. This one is so quick and easy you can make it in about 10-15 minutes tops. And it is nice and flavourful. Let’s not be coy here, these are lima beans. They are also called butter beans. Don’t be afraid, these are flavourful. And did I mention quick? Perfect with fresh crusty bread.
Quick and Easy Italian Butter Beans
3/4 cup vegetable stock
1 14oz can of butter beans
1-2 cloves of garlic, chopped
1 Tbsp olive oil
1 Tbsp tomato paste
salt and pepper to taste
parsley for garnish (I used spinach, I needed green!)
Drain and rinse the can of beans and add to a pot with the vegetable stock. Bring to a boil and simmer gently for 5-10 minutes.
Heat the olive oil in a seperate pan and stir fry the garlic until aromatic. Add the tomato paste and about 3 tablespoons of the vegetable stock to form a sauce.
Drain the beans, add them to the sauce in the pan and combine. Top with fresh parsley, salt and pepper to taste. Serve warm.
