Okay, so it is pretty much the same recipe as the one I like. Peanut Butter Jam Bars are a big hit at work. I love baking for birthdays.

It is true, I used store bought jam for this one. I know. I’m an embarrassment. I’m so very sorry. I just don’t have anymore strawberry jam left. I just opened the blueberry and it is not right anymore, a bit crystalized. Boo. So store bought had to be a poor substitute. Not saying that people didn’t inhale these 😉 Such an easy treat, try them yourselves!

Peanut Butter Jam Bars
 
Ingredients
  • 112 g (1 stick, or ½ cup) nondairy butter
  • 150 g (3/4 cup) evaporated cane juice or granulated sugar
  • 256 g (1 cup) natural crunchy peanut butter
  • 1 teaspoon pure vanilla extract
  • 1 Ener-g egg replacer (I have lots of it left over from some recent testing but if you’re a hater, use your favorite egg sub to replace 1 egg)
  • 180 g (1½ cups) whole wheat pastry flour (mine’s cold from the freezer)
  • ½ teaspoon baking powder
  • ½ teaspoon fine sea salt
  • Generous ¾ cup of your favorite jam
Instructions
  1. Preheat oven to 350°F (180°C, or gas mark 4). Line an 8-inch (20-cm) square baking pan with parchment paper.
  2. Using an electric mixer, combine the butter, sugar, peanut butter, vanilla and faux egg.
  3. Add flour, baking powder and salt, and stir until just combined.
  4. Using your hands or an offset spatula, press down or spread ⅔ of the dough into the prepared pan.
  5. Spread the jam evenly on top, leaving ½ an inch around the edges.
  6. Crumble remaining dough evenly on top of the jam.
  7. Bake for 30 minutes, until the top is golden brown. Place the pan on a wire rack to cool 15 minutes. Carefully transfer the parchment paper and bars onto the wire rack and let cool completely before placing in the fridge to chill, as these are tastiest served cold. Slice away and enjoy.
