Oh YUM! Another fabulous recipe from Pinch My Salt. I veganized them with margarine, egg replacers and almond milk/vinegar for the buttermilk. The brown sugar was an excellent choice and really I only had one problem with these muffins. Not enough raisins. But hey, I’m a raisin junkie. Since there is more flour than oats the oats are more of a compliment and the texture is great. These will go into rotation since they are so easy to make, and I generally always have these ingredients on hand.
