Happy Easter! I honestly didn’t have high hopes for these cookies, so I made the previous bakery style cookies and cream cookies at the same time. It is always a bummer to have a cookie flop. However, these cookies from Eat, Live, Run was too tempting not to make.
These are a really soft cookie and I was worried because they didn’t have really much in the way of flavours and spicing. However the lemon zest really bloomed on the second day and the cookies tasted great. When they were made I was convinced they needed more lemon but on day two they were fine. I think the cream of tartar made these a great texture. I made them vegan with egg replacer and soy milk in the glaze. I also made them Shannon sized. Which is huge. I’m a fan of huge cookies. I can’t help it!
