Ginger Pear Bran Muffins

I still have pears. This recipe sounded interesting. I veganized it with egg replacer, coconut milk yogurt, and agave nectar. I made half a batch and still got 12 muffins.

One of the problems I had was I couldn’t get my damn pears to mash. After sitting around for a few weeks, they just were not mushy. At all. I diced them small and put them in the microwave to hopefully soften them up a bit. Nope. I also added some sugar since I didn’t get the full ripe sweetness from the pears.┬áSo there are pieces of pear and ginger in the muffins, which isn’t a bad thing.

I wasn’t in love with the big pockets of ginger but that’s me. This is a pretty easy and healthy recipe. It wouldn’t replace my Bran Muffins, but it was a good way to use up pears!
