Looking back at other blog posts, I eat a lot of beans and greens. I can’t help it really, it is so easy and nutritious. This recipe from Yellow Rose Recipes was just simple, even if you are are cooking dry beans. The recipe is planned out for working folks, and that is fully appreciated!

This would be a perfect side, but I like mine as a main meal. Paired with some grilled tofu or tempeh and it is a nice easy dish. This one has a more subtle neutral taste so you can pair it was many different types of meals. I dig it. Yum!
