Old-Fashioned Chelsea Waffles From Vegan Brunch

My maiden voyage making waffles! These waffles from Vegan Brunch got a lot of rave reviews so I had to try them first. I’m not sure if I’ve mentioned it before, but I’m horrible at pancakes. Like, really really bad. Pretty much the husband refuses to try them anymore they are that bad. Even if they have chocolate chips. He never refuses something with chocolate.

So I kept my worries to myself and busted out my waffle plates for Mr. Foreman. I wasn’t about to invest in a waffle iron if the pancake curse carried over. That would be stupid, and my foreman came with interchangeable plates. So I heated it up and put a scoop of batter in each side and waited 5 minutes. Truth be told, I could have used more than 1/3 a cup for each waffle. It said 2/3 in the manual, and maybe that is for each side? I split up that 2/3 to 1/3 on each side but got kinda cute round waffles and no spilling. Wow. Not burnt! Wow. Kinda tasty! The texture was a bit too chewy but I’m not blaming the recipe, I probably overmixed the batter. These were crisp, yet a tiny bit rubbery. Still an amazing first try, and a pretty good recipe. None of them stuck and I got 10 out of the batch. Yum! And the leftovers were just like frozen waffles, which I love. I heated them up in the toaster and they were perfect. Then again, I didn’t attack them with a knife and fork, I kicked it old school and held them in my hand 😉
