Mexican Chocolate Snickerdoodles To The Rescue!

Yes, these are the cookies I went home and baked on my lunch hour. I *almost* forgot a co-workers birthday, but I didn’t! Turns out she took a half day so everyone just enjoyed these the next day anyway. Well, I had mine right when they were baked. These cookies rock. They are from Vegan Cookies Invade Your Cookie Jar and were great for the challenge. This whole book is just stellar.

They tasted of chocolate, but then you got a hint of cinnamon. After a bit you got the heat from the cayenne in the back of your throat. I was surprised on how hot they were, especially for a book recipe. I generally double spices but I didn’t double the cayenne and I’m kind of glad I left it be. The subtle warmth was just great.
