East Coast Coffee Cake

A definite winner from Vegan Brunch. I made this for a going away day at work. I’ll bake for any occasion, I fully admit it. While I will miss the co-worker who left, I’m happy I got to bake. I added blueberries to this East Coast Coffee Cake and a bit of orange peel. It turned out great! The recipe was super easy and wasn’t too sweet which is what I come to expect in a coffee cake. I personally didn’t love the crumb top but everyone else did. I think it needed more moisture to make it a bit more crunchy and I would definitely do that next time, so it is an easy fix.

    That cake is incredible. I feel like I’ve made it in 30 different ways and it’s always great. Plus, easy to whip up on a whim when company is on their way.
