Wow. I didn’t think that these would be so… blah. Vegan Brunch has been spot on but the husband didn’t really like them. He had a few when they were warm and then they sat until they had fur. And they were chocolate. I didn’t put the almond extract in them and used vanilla so I could taste them and be unbiased. The texture was just too soft. It wasn’t even cake-like. They were fully cooked, it just didn’t work out. I like a more sturdy muffin.
Just meh. I won’t make these again. Which is funny because the husband loves the raspberry blackout cake from Vegan With A Vengeance but this recipe was a no-go.
