Okay, I picked this from the American Vegan Kitchen because it was roasted broccoli. I love roasted broccoli. A lot. So roasted broccoli plus red bell peppers is an easy choice. I used garlic oil to roast them but you could go plain. It is a super side dish. If you want a new way to eat broccoli roast it. It makes it crispy and not mushy. You could even just use a spritz of cooking spray if you are watching your fat intake.
