I have no idea why people wait for snow days to bake or cook something special (or buy excess bread and milk). Is your time and stomach not worth something good on a regular day? So I was snowed in yesterday and decided to work from home and just do my normal day of cooking and baking. The husband was out of breakfast options so muffins were just something to bake. Oh, and I got a lot of carrots in my CSA. I love trying to find ways to use my CSA produce. Carrot-Raisin muffins are my final recipe from Vegan With A Vengeance for this challenge.
These really are quite healthy muffins. 2 cups of carrots and only 1/4 cup of sugar. I personally think they need a bit more sugar, but that’s just me and my current sweet tooth. They are baked at a higher temperature and have a lovely fluffy texture. I really do like making muffins, they are so easy.
