I’ve made these muffins before but I put a little crunch to them. Oh, and this time when I made these Banana Nut Chip Muffins I actually put nuts in them. I had some very nice looking walnuts that were perfect for these muffins. And unfortunately the 1/4 cup of chocolate chips. So not enough. The husband was cranky and thought I was too stingy.
But seriously these muffins are great. I used all whole wheat flour because I was too lazy to get the rice flour out of the back of the cupboard. These have a great taste and a good texture. You could make them gluten free with the rice flour plus a GF mix. The unsweetened coconut is very finely ground so you aren’t eating stingy bits of coconut. It is quite subtle. The banana is the star of the show, but as the husband pointed out, you might want to toss a 1/2 cup of chips in there to make your loved ones happier.
