Quick and Easy “Beef” Stew

I’m embarrassed to even post this as a “recipe”. Honestly, it is NOT a recipe. I view it as when people make recipes using cake mix as a base and adding a few things. More of a concoction than a recipe. So this is a quick concoction that I make once in awhile. It is a super easy stew with pre-made ingredients.

Quick and Easy “Beef” Stew

1 Package of Seitan, Soy Curls or Frozen Veggie Beef  Chunks (my preference and can be added frozen)
1 Package of Brown Vegetarian or Vegan Gravy
Mini Fingerling Potatoes
Random Veggies (here was shredded carrots leftover from carrot cake cupcakes)
1 Tbsp Sage
1 Tbsp Oregano
Salt & Pepper to Taste

Boil the potatoes and rehydrate the soy curls or anything that might need a bit of cooking. Drain out the potatoes and reserve a few cups of the starchy water. Mix in the gravy packet and add in the meatstuff, potatoes and random veggies. Let it simmer for a bit and thicken. Leftovers taste great.
