Pommes Anna

This is my second recipe from The Urban Vegan and I already knew I would like it. Why? Well, it involved potatoes. Oh, and I’ve made almost the exact same recipe before. Well, this one had 2 lbs of potatoes and 6 Tbps of margarine, but you know what I mean. I seasoned each layer with Mural of Flavor from Penzeys, plus salt and pepper. YUM.

Oh, and there was a bit of cooking variation that I will for sure keep. Cooked in cast iron rocks! I used the lid of my dutch oven to press down the potatoes as they were cooking. They were cooked for 45 minutes but could have honestly used an hour. Some of the middle was a bit al dente. Still, I love recipes like this and will make it again.
