Chewy Chocolate-Raspberry Cookies

Book two of the challenge brings us to Veganomicon. A really great vegan cookbook. I’ve made a few recipes already and have always been happy with the results. These chewy chocolate-raspberry cookies were a first attempt and so easy. They turned out great! I used more than the 1/2 cup of jam called for since I don’t love to actually eat raspberry jam, but I keep it around for Raspberry Blackout Cake. Oh, I should remake that soon….tangent, sorry.

Anyway, these had almond extract and I hated them. The cookies got raves, but I HATE almond extract with a passion. I love almonds, hate the extract. I even bought good quality almond extract. It just makes me a sad bunny. They were a “last day on the job” gift anyway, so it was more important that my friend like them. And she did. While I’m sorry to not be working with her anymore, I’m glad that I gave her a good chocolately send off!

  1. This is actually one of my favorite recipes in Veganomicon, however, I don’t feel like Almond extract is appropriate in these, it makes them taste..umm…not chocolatey. I use chocolate extract instead. I encourage you to try them again-minus the almond extract, you can even use vanilla if you don’t have chocolate extract.

    1. Great idea. Everyone loved them and I saved a few calories. I know they will be made again, so I look forward to trying them minus the almond extract 😉

  2. I’m so with you on almond extract. It seems like it’s ridiculously strong and takes over all of the other flavors in a recipe. I just gave a HUGE bottle to my mom because I never, ever use it. Almond extract haters unite!
