Wow, I think these ones turned out better when I made them before. The recipe for Caramel-Cinnamon Crunch Icebox Cookies is a labour of love. You can’t whip these babies up last minute. But I got a request so I did them. I did rush them a bit which is why they aren’t super crisp edged because well, I started and finished them in the same evening. It’s all good. I veganized them with egg replacer, margarine & agave nectar this time as well. I felt my cinnamon was a bit strong so I eased off a bit and that was a bit of a mistake. Next time I know these cookies can handle the spice. Oh well!
