I don’t know what I’m doing wrong but all of my crumb in every recipe from The Bread Bakers Apprentice is really similar. Hmm. Well, since the French bread really didn’t turn out, this was a pleasant change. It really was more like an Italian loaf.

It did turn out pretty tasty, and in fact the husband ate quite a bit of these rolls. This isn’t his normal M.O. so it was very cool to see him really enjoy a bread I baked. I made this recipe into torpedo rolls… well I tried. I’m still pretty bad with the shaping, but I tried. I found this dough easy to work with, but still the crumb is way too tight.
