I was worried about the vague instructions in 100 Great Breads, but it turned out great. No water or liquid values is kind of creepy, but I got a great dough out of it. Suprise! I ended up doing a half amount of dough, a large onion and the full 2 cups of mushrooms for this beauty. I think it might have been too much toppings, oh well. It is darn tasty but I think I prefer the Bread Bakers Apprentice focaccia just for the plain slick oilyness of it. It sounds stupid, but it just wowed me. This one was pretty good however, but we didn’t finish it.
I think I’ll just steal the topping ideas and put them on the BBA bread next time.
