Cookies and Cream Mini Cheesecake

Most people love cookies and cream. Most people love cheesecake. I only love one of those things, that being cookies and cream. I made this dessert anyway because I feel like I was in sugar overload. A good way to avoid the whole thing. I set out to make these with peppermint Joe Joe’s but well, they were all sold out. Oh well. Regular Joe Joe’s worked fine.

I used this recipe which was a Martha Stewart recipe. I made them vegan and unfortunately without the egg they had a hard time setting. I also made and served them on the same day, so they were quite soft. Tasty? Yes, but only when eaten with the bottom cookie. The reviewers told me the cheesecake part wasn’t sweet enough without the cookie, but totally balanced when eaten with the bottom. I also only made half and that was more than enough. Doubt I would make them again.
