This is one of the weirdest things I think I have cooked. This is the Crumbly Carrots recipe from The New Laurel’s Kitchen. And it is freaking weird. First of all, I’m not a huge fan of cooked carrots. But breaded and fried? I’ll give it a go.

I’m kind of a breading newb, and I decided to just exclude the egg from the recipe as the binder with the “milk” (I used unsweetened almond). I’m sure there is an excellent vegan substitute, but honestly I didn’t care enough to find one. And breading food? Yeah, if I’m going that route it generally comes done for me. I’m lazy like that. Oh, and frying. I’m terrible at it. I considered for a hot moment to bake them, but I fried them in a non stick pan with olive oil spray instead. Hell, the carrots were already cooked.

It just tasted…weird but okay. I’m sure you could TOTALLY get kids to eat carrots this way. I kinda prefer tempura veggies, but there is no way I’m going to do those at home. I’m frying phobic pretty much. There was a bit of cumin and garlic in the breadcrumb mixture and it gave a really subtle taste. I um, ate them with bbq sauce. I’m klassy.

I wouldn’t make them again as they are stupidly time intensive. However, if you want a new way to try cooked carrots and are a bit better at breading and frying than I am, go ahead.
