Gingered Carrot Cookies

I’ve owned Dorie Greenspan’s Baking From My Home To Yours for a long time, and have never baked anything out of it. I’ve been following Tuesdays with Dorie for a long time and actually that is what prompted me to buy the book. I used flax instead of an egg and margarine instead of butter. Pretty easy. Oh, the dough is really really dry, so I added a splash of water. It says it is supposed to be really dry but I wasn’t digging it. I liked these best right after they cooled, since the texture turned more cakey and soft the next day.
