When life gives you pumpkin guts, make roasted pumpkin seeds! One of my favourite treats, but they never last long in this house. This batch lasted about 12 minutes. Between two of us eating slowly. Yeah. I hate cutting pumpkins but I love roasting seeds. I need to work out something with someone who loves to carve pumpkins.
Easy Roasted Pumpkin Seeds
Seeds from your pumpkin (about a cup here, boo! I wanted more!)
1 tsp garlic infused grapseed oil (or olive oil)
1/2 tsp season salt (or more, I honestly don’t measure)
Rinse off the pumpkin seeds but don’t worry about them being slimy or having a bit of pumpkin stuck to them. Toss them in the oil and add the season salt (or flavour blend of your choice) and toss well. Place on a foil lined baking sheet and roast in a 300 degree oven for 45 minutes or until golden brown.
