I got this idea from a party I went to years ago and it was such a great appetizer. We honestly have this for dinner. See, I live a meat and cheese eater, and I don’t always want to make him eat vegan foods. I make mine without cheese or meat and his are different every time. He doesn’t like red sauce so his get pesto. The one in the back is pesto, pre-cooked chicken and cheese. Mine is mushrooms. Yum. The key is to put a mini (fake) pepperoni or two in the bottom of the muffin pan so that the sauce doesn’t make the bottom soggy.

Mini Veggie Pizzas
Makes 12

1 amount of dough for 1 pizza (pillsbury is used for the nutritional value)
1/2 cup Pizza or Marinara Sauce
12 Veggie Pepperoni Slices
1 cup Mushrooms diced
2 Tbsp of Italian seasoning

Honestly, make these with your favourite toppings! You can experiment because you don’t have to make a whole pizza to test out flavours.

  1. Preheat oven to 400 degrees. Split dough into 12 and press on the bottoms and sides of an oiled muffin tin.
  2. Place a mini veggie pepperoni in the bottom, then add sauce and toppings. Press down the toppings and it should help the dough creep up the sides. Sprinkle with Italian seasoning (and cheese if adding).
  3. Bake at 400 degrees for 15-20 minutes or until tops are golden brown.
