Honestly, I think my husband is happy with the old baking blog going away. You see, I’m not one to repeat, and this is the perfect opportunity to repeat recipes, since they haven’t been reviewed on this blog yet! I had some bananas to use up and asked him what type of muffin he wanted. Funny enough, he didn’t automatically say chocolate but he said he wanted banana walnut muffins. The muffins he was talking about were from My Sweet Vegan (which I’ll make again later) but I didn’t feel like soaking the dried bananas and such at the time. So I opted to make the Banana-Wheat Germ Muffins from Veganomicon again, and added walnuts. They got 2 thumbs up and will be perfect for breakfasts.
I consider these pretty darn healthy with the whole wheat pastry flower and wheat germ. They are moist and tasty. Kind of plain, but sometimes you don’t need the bling. I’ve also made these with wheat bran instead of germ and it makes them a bit more textural but still wonderful.
