These espresso chip cookies have definitely become a staple in our house. I made them again for friends this weekend. The recipe is from Vegan Cookies Invade Your Cookie Jar and I highly recommend it as a great cookie book. Can you even get a whiff of vegan in these babies? Hell no. They are full of awesome, and espresso. I use the good Italian stuff of course 
I make these giant, so this last time I made them I got 10. Yep, 10. It’s all good, enough for everyone!
