Farmer’s Market Finds: Red Noodle Beans

How could I pass these by? They were unruly and looked wonderful. How to use them? Well, just like any long bean really. I stirfryed them with tofu and Szechuan seasonings. Don’t be afraid to try something new or weird looking. Don’t know what to do with it? Ask the vendor, they will have a really good idea on how to prepare them and sometimes have handouts with recipes!

    i tried them in a version of this stir-fry: (with red peppers & chicken over udon noodles) & loved them so much i’m adding them to the garden next year!
